This is usually done when making change or taking out the cut. The player who wins the pot is so pleased at winning that he seldom notices that the cut has been taken, let alone spotting the theft.

If they charged a reasonable house percentage (cut or rake) as dictated under Scarne's General Rules for Commercialized Online Hold'em Poker (pages 60-63) they would have a Online Hold'em Poker game most of the time. As it is, they break most of the players in a few weeks and then wonder why they no longer have a game.
